Last week I played around a little bit with potato salad recipes, hoping to replace the mayonnaise based dressing with Stonyfield Greek Yogurt. The fingerling potatoes were looking so bright and fun at our grocery store, plus the kids love the purple fingerling potatoes. I opted to add green beans and yellow and red grape tomatoes. The combination was delicious. And the addition of a little cider vinegar added just the right tang. Here’s the recipe!
