Once a month, during the few years we lived in Arizona near my grandparents, we would join them for dinner. After we arrived my Grandfather would be quick to pour us each a gin and tonic and we’d sit on the patio sipping our drinks and watching the jack rabbits scurry across the golf course.
After drinks my Grandma and I would head to the kitchen to finish the sides for the meal, while the guys grilled the meat. Whenever grilling was involved you could count on Grandma making her delicious potato salad. With the perfect tang, the right amount of crunch, delicious flavor and the addition of hard-boiled eggs there’s little that could beat her potato salad.
I once asked her for the recipe, to which she replied, “Well. I’m not sure. I just put a little of this and that in and have your Grandpa taste it and when he says it’s good, it’s done.”
With Grandpa’s input she wrote down as best she could the ingredients to her potato salad dressing and passed them along to me. I’ve since made my own additions and tweaked the recipe a bit, but in keeping with the “taste and see” method of the original, I really just add a pinch of this and that until it tastes “right.”
A new addition to the recipe this year is Pete and Gerry’s Organic Hard-Boiled Eggs, these pre-packaged hard-boiled eggs are peeled and ready to eat and are a great way to cut down on cooking time and save on dishes.

Grandma’s Potato Salad
Prep time: 20 minutes
Cook Time: 20 minutes
1 lb baby potatoes
2 stalks celery
6 Pete and Gerry’s Organic Hard Boiled Eggs
½ Tbs apple cider vinegar
1 ½ Tbs stoneground Dijon mustard
¼ cup organic mayo
¼ cup organic plain Greek yogurt
1 pinch dill
1 pinch garlic powder
1 punch celery seed
Salt & pepper to taste
Splash of cold milk (Optional, used in order to thin dressing)
½ tsp sugar
1 bunch chives, chopped
