There’s few things as satisfying as pizza after a long run or race. But what about those early morning long runs? Isn’t pizza for lunch and dinner? Nope. Pizza is definitely a breakfast food, and when you toss a couple organic Pete and Gerry’s Eggs on top, it becomes the perfect food to refuel and replace key nutrients after a long run.
This Good Morning Pizza is one of my favorites to make both for brunch and for dinner. The creaminess of the goat cheese and runny yolk make it extra decadent and the sweetness of the fig plays nicely against the saltiness of the cheese. This pizza is basically the perfect runner-fuel, give it a try after you next long run!
